Coconut Snowball Madeleines Recipe!
It may only be November, but the Christmas season is upon us! Although this Christmas season will be undeniably different than the last few years, baking a special Christmas treat will make any house full of Christmas spirit.
Today we will be making Coconut Snowball Madeleines:
The Ingredients you need are as followed-
Self-Raising Flour (165 g)
Vanilla Extract (1 tsp)
3 eggs
One Lemon
Caster Sugar (165 g)
Unsalted Butter (165 g)
Muffin tin- 12 holes
Step one: Heat the oven to 356 degrees Fahrenheit
Step two: Butter the 12 hole muffin tin
Step three: zest your lemon and put the lemon zest, butter, and sugar into a large bowl and mix it all together for seven minutes
Step four: then put the eggs and vanilla extract into the bowl, mix, and then put the self-raising flour until you are left with a batter-like mix
Step five: Put the batter into the muffin tin and bake it for around 16 minutes until the Madeleines are golden brown
Step six: Remove the Madeline's onto a separate rack and wait for it to cool
Step seven: Now we will be making the coating. You will need the following-
Cherry jam (160g)
Coconut shavings
Glace cherries
Red edible glitter
Put the Jam and 5-tsp warm water on the pan and cook in medium-high heat. Whisk the jam until the consistency is a simmer. Let it cook for two minutes before pouring it into the bowl. Let cool for 5 minutes
Step eight: Now we will make the filling- you need the following ingredients
Double cream (100ml)
Advocate (50 ml)
Caster sugar (1 tsp)
Carefully cut out the center of the cake. Whisk the following ingredients and then put the filling into the cake. Cover after filled with the cake you cut off.
Step nine: put the cakes in a freezer for ten minutes
Step ten: After 10 minutes put the jam mixture and coconut shavings on the top of the cakes. In addition, roll the cherries in the red glitter and then put the cherry on the top of the madeleines.
Step eleven: Done!
